👋 Dear Companions, hello! 👋

We were delighted to welcome you for the first week of our store's opening.

Today, we are writing a blog to offer you recipes for a salad that is a little more special, and with a very Belgian name. I named it... the chicory salad!

In this blog, you will find 4 ways to prepare this slightly bitter salad, but just as tasty as its cousins. 4 fresh dishes that already invite summer into the home. 😋

If you like one of these recipes, the ingredients available for purchase at the Company store will be marked in GREEN (The store is open from Monday to Saturday, from 10 AM to 7:30 PM)

First recipe: Caramelized chicory salad with pear, scallions, and toasted hazelnuts

Ingredients (For 2 people):

  • 1 chicory salad
  • 1 ripe pear
  • 1 scallion
  • Chopped hazelnuts
  • Olive oil
  • Maple or apple syrup (Optional)

Preparation :

  1. Slice the scallions and sauté them in a little oil.
  2. Add the chicory salad, then the slices of pear.
  3. Cook until lightly caramelized.
  4. Bonus: Add a drizzle of maple syrup or apple syrup.
  5. Add the hazelnuts just before tasting.


Second recipe: Warm endive salad, apple, red onion, and walnuts

Ingredients (For 2 people):

  • 1 chicory salad
  • 1 apple
  • 1 little red onion
  • 1 handful of nuts
  • Walnut oil (or any other light oil)
  • Cider vinegar
  • Sweet mustard
  • Flat-leaf parsley

Preparation :

  1. Slice the red onion and sauté it over low heat.
  2. Cut the chicory salad into strips and sauté it for a few minutes in the pan.
  3. Cut the apple into thin wedges.
  4. Prepare a vinaigrette with mustard, vinegar, oil, and chopped parsley.
  5. Mix the chicory salad, the apple, the toasted nuts, and the dressing.
  6. Serve warm or at room temperature.


Third recipe: Sautéed chicory salad, chestnut mushrooms, roasted potatoes, and onions

Ingredients (For 2 people):

  • 1 chicory salad
  • 200g of chestnut mushrooms
  • 2 Alouette potatoes
  • 1 red onion
  • 1 clove of garlic (For enthusiasts)
  • Flat-leaf parsley
  • Olive oil

Preparation :

  1. Cut the potatoes into cubes, roast them for 30 minutes in the oven at 200°C with a drizzle of oil.
  2. Sauté the onion, garlic, and mushrooms in the pan.
  3. Add the chopped chicory salad to the pan.
  4. Add the potatoes, sprinkle with flat-leaf parsley, and serve hot.


Fourth recipe: Fresh mesclun with chicory salad, spinach, lettuce, and radish

Ingredients (For 2 people):

  • 1 handful of chicory salad
  • 1 handful of spinach leaves
  • 1 handful of red oak lettuce leaves
  • 6 to 8 pink radishes (With their greens)
  • Bonus: A few sprigs of parsley

Preparation :

  1. Wash and thoroughly spin dry all the leaves.
  2. Finely slice the chicory salad, the spinach if they are large, and the lettuce.
  3. Cut the radishes into thin slices or quarters depending on their size.
  4. Mix all the vegetables in a large bowl with the parsley.
  5. Add a dressing of your choice.
